Method

Step 1: Prepare the Cauliflower

Break the cauliflower into medium-sized florets and rinse thoroughly. Place them in a pot of salted boiling water and cook for 5–6 minutes until just tender but still firm. Drain well and set aside. Overcooking at this stage will make the dish watery.
